This Victorinox Fibrox Boning Knife is designed to cut meat from bones. Chicken or duck for instance, or spare ribs. The blade is thick enough to handle these types of tasks. Please note: you shouldn't cut through the bones.
The handle is made from Fibrox. It has the qualities of rubber, but it is processed like plastic. As such Fibrox is quite stiff. The main advantage is that even if your hands are wet or if you are wearing gloves you don't have to worry about the knife slipping from your hands. The solid design ensures that food, mold or other dirt does not stand a chance. In addition, Fibrox knives are easy to clean because they are dishwasher safe. However, it is recommended cleaning these knives by hand to maintain the sharpness of the edge.
Keep in mind that Fibrox is a light-weight material, therefore the half tang, the light-weight handle and the blade is the heaviest part of the knife. This makes the knife easy to use.
